The house

The house of the ripest hour

Chef Hessa Al Marri grew up in Deira, ten minutes up the creek. She trained in Copenhagen and San Sebastián, then came home to give Gulf cuisine the stage she felt it was owed. The house was a pearl merchant's, raised in the boom of the 1900s–1920s and restored room by room. In a lit niche by the door sit her grandfather's sea log (winds, stars, the named hērāt) and his pearl scale: the founding objects of this kitchen.

We didn't open a restaurant; we reopened a house.
